Wheat Bread
While in Palo Alto, Joey would bake a weeks worth of bread while watching Monday night football.
2 pkg. yeast
1 Tbsp. salt
1/2 cup warm water (105-115)
1/4 cup shortening
1/3 cup honey
1-3/4 cup warm water
1/3 cup molasses
6-7 cups whole wheat flour
Dissolve yeast in 1/2 cup warm water. Stir in honey, molasses, salt, shortening, 1 3/4 cups water and 3 1/2 cups flour. Beat until smooth. Mix in enough remaining flour to make dough easy to handle. Knead about 10 min., until smooth and elastic. Place in greased bowl; turn; cover; let rise about 1 hour, until doubled. Punch down dough; divide in half. Roll each half into rectangle 18x9". Roll up starting at short side; seal edge. Fold ends under and place in greased loaf pan (9x5x3), seam side down. Cover; let rise 1 hour. Bake at 375 for 40-45 min.
