Swedish Meatballs
Mom's meatballs need no introduction, but remember to keep this delicious secret recipe in the family!
6 lbs. ground beef
3 eggs
1 small can mushrooms, minced
1 can mushroom soup
1 14 oz. box cheese crackers
3 tsp. season-all
1 tsp. summer savory
1 tsp. sage
1 tsp. rosemary, crushed
1 tsp. grated lemon rind
Optional:
1/4 tsp. thyme
1/2 tsp. marjoram
1/2 tsp. sweet basil
Mix all ingredients except soup (can add a little soup if moisture is needed.); roll into small meatballs. Cook in frying pan until browned all around. Remove from pan. Drain fat from pan leaving residue; add mushroom soup ( a little gravy master can be added) plus water. Simmer to make a gravy for the meatballs. Pour gravy over meatballs. Avoid stirring meatballs in gravy as this tends to break up the meatballs. Place in oven to warm before serving. Makes lots of meatballs for the 12th night of Christmas party!
