Pumpkin Pancakes

Michelle's family likes these pancakes around the holidays.


2  cups bisquit mix
2  tsp. cinnamon
12 oz. can evaporated milk
2  Tbsp. oil
1  tsp. vanilla
2 Tbsp. light brown sugar
1  tsp. allspice
1/2  cup solid pack pumpkin
2  eggs


In large mixer bowl, combine bisquit mix, sugar, cinnamon and allspice. Add evaporated milk, pumpkin, oil, eggs and vanilla; beat until smooth. Pour batter onto heated and lightly greased griddle. Cook until top surface is bubbly and edges are dry. Turn, cook until golden. Serve with syrup or honey. Makes about 16 pancakes.
