Peanut Butter Banana Muffins

1  cup flour
1/2  cup peanut butter
3/4  cup oats
1/2  cup mashed, ripe banana
1/3  cup brown sugar
1  egg, beaten
1  Tbsp. baking powder
2  Tbsp. oil
1  cup milk
1  tsp. vanilla

Streusel Topping:
1/4  cup oats
2  Tbsp. margarine, melted
1/4  cup flour
2  Tbsp. brown sugar


Combine flour, oats, brown sugar and baking powder. Whisk together milk, peanut butter, banana, egg, oil and vanilla; add to dry ingredients, mixing just until moistened. Fill prepared
muffin cups 3/4 full. Combine topping ingredients; sprinkle evenly over batter. Bake at 375 degrees for 16 to 18 minutes or until golden brown. Serve warm. Makes 1 dozen muffins.
