Oatmeal Raisin Muffins

1  cup rolled oats
2  eggs, lightly beaten
6  Tbsp. melted butter
1/2  tsp. baking powder
3/4  tsp. baking soda
1/3  cup raisins
1  cup buttermilk
1/3  cup light brown sugar
3/4  cup flour
1/4  tsp. salt
1/2  tsp. cinnamon


Sift flour, baking powder, salt, baking soda and cinnamon; set aside. Combine oatmeal and buttermilk; let stand 30 minutes. Stir in eggs. Add sugar, butter and flour mixture. Stir until just combined. Batter will be lumpy. Fold in raisins. Spoon into prepared muffin cups, filling 2/3 full. Bake at 400 degrees for 15 to 20 minutes. Makes 12 muffins.
