Hot Cross Buns
Another one of Dad's favorites.
1/2 cup sugar
3 Tbsp. melted butter
1/2 tsp. salt
1 cup milk, scalded
1 pkg. yeast
1/4 cup warm water
2 eggs
3 cups sifted flour
1/2 tsp. cinnamon
1/2 cup currants, washed
Add sugar, butter and salt to milk and cool to lukewarm. Sir in yeast dissolved in 1/4 cup warm water and 1 well-beaten egg. Sift flour and cinnamon together, add to liquid, with currants and mix well. Cover and let rise in a warm place until double in bulk. Shape into large biscuits and place on a well-greased baking pan. Let rise. Use remaining egg, slightly beaten, to brush tops of biscuits. Cut a cross on each biscuit with a very sharp knife. Bake in a 400 degree oven for 20 minutes. Make a cross of powdered sugar frosting. Makes 2 dozen buns.
