Dutch Babies

Michelle likes these big, puffy, popover like pancakes with powdered sugar, fresh strawberries and whipped cream.

Serving
Size:       Butter       Eggs      EACH milk and flour      Pan size
2 to 3      1/4 cup      3            3/4 cup                            8 inch pie pan
3 to 4      1/3 cup      4            1 cup                               9 inch square pan
4 to 5      1/2 cup      5            1-1/4 cup                        10 inch pie pan
5 to 6       1/2 cup     6            1-1/2 cup                        13x9 inch pan


Preheat oven to 425 degrees. Put butter in pan and melt in oven. Watch closely so butter does not burn. Whirl eggs in food processor until just beaten. Add milk and flour and combine until mixture is just blended. Do not overmix, batter should be slightly lumpy. Pour batter into pan containing hot
melted butter and return to oven. Bake for 20 to 25 minutes until puffed and golden. Serve immediately with a sprinkling of powdered sugar and a squeeze of lemon juice. Also, try maple syrup, jams, sliced fresh fruit and whipped cream.
