Cranberry Muffins
Malia likes to make these for Christmas and Thanksgiving.
1 cup cranberries
1-1/2 cups flour
2 tsp. baking powder
1/2 tsp. cinnamon
1 beaten egg
3/4 cup orange juice
1/4 cup chopped walnuts
1/4 cup sugar
1/4 cup sugar
1 tsp. salt
1/4 tsp. allspice
1/4 tsp. grated orange peel
1/3 cup melted butter or margarine
Coarsely chop cranberries. Sprinkle with 1/4 cup sugar; set aside. In bowl, stir together flour, 1/4 cup sugar, baking powder, salt, cinnamon, allspice and make a well in the center. Combine egg, orange peel, orange juice and melted butter. Add all at once to the flour mixture stirring to moisten. Fold in cranberry mixture and nuts. Fill greased muffin cups, sprinkle with sugar, and bake at 375 degrees for 15-20 minutes or until golden. Makes 2 dozen mini muffins.
