Cranberry Bread
A Christmas favorite from Mom's kitchen.
1-1/2 cups coarsely chopped cranberries
1/2 cup chopped walnuts
1 Tbsp. flour
2 cups flour
1-12 tsp. baking soda
1/2 tsp. salt
1 cup cugar
1/4 cup shortening egg, slightly beaten
3/4 cup orange juice
1 Tbsp. orange rind
Combine cranberries, walnuts and 1 Tbsp. flour; set aside. Sift together flour, baking soda and salt. Stir in sugar. Cut in shortening until crumbly. Beat together egg and orange juice and add to flour mixture. Mix until dry ingredients are moistened. Stir in cranberry-nut mixture and orange rind. Bake in greased 81/2x41/2x25/8 inch loaf pan, at 350 degrees for 65 minutes or until toothpick comes out clean.
