Cinnamon Honey Rolls

Joey took a basic recipe and changed it to come up with rolls that are "better than the best" in SLO town (He's been told)!


1   pkg. dry yeast
4   Tbsp. margarine
1/2  cup warm water (105-115)
1/4  cup sugar
1/2  cup lukewarm milk (scalded)
1/4  cup brown sugar
1/3  cup shortening
1/4  cup honey
1/3  cup sugar
2  Tbsp. cinnamon
1  tsp. salt
1  cup powdered sugar
1  egg
1  Tbsp. milk
2-1/2  cups all purpose flour
1  tsp. vanilla
1  cup whole wheat flour


Dissolve yeast in warm water in a 2 1/2 qt. bowl. Stir in milk, sugar, shortening, salt, egg, whole wheat flour and 1 cup all pura pose flour. Beat until smooth. Stir in enough remaining flour
to make dough easy to handle. Turn onto lightly floured surface; knead until smooth and elastic, about 5 min. Place dough in greased bowl; turn greased side up. Cover and let rise in warm place until double, about 1 1/2 hours. On lightly floured surface flatten dough with hands or rolling pin into a rectangle approximately 20"x12". Spread with softened margarine. Mix sugar, brown sugar and cinnamon; sprinkle mixture evenly over rectangle. Drizzle honey over rectangle. Roll up tightly beginning with the 20" side. Pinch edge of dough into roll to seal well. Stretch roll to make even and cut into 1 1/2" slices. Place pieces slightly apart in greased deep rectangle pan. Let rise in warm place until double, about 40 minutes. Heat oven to 375 degrees. Bake until golden brown, about 25 to 30 minutes. Combine powdered sugar, 1 Tbsp. milk and vanilla for glaze; spread over rolls while warm. Note: These rolls contain no calories when eaten with non-fat milk, diet coke, or decaf coffee without sugar, because we all know that diet drinks negate calories!!
