Butterhorns
These delicious pastries take very little effort. Be careful though, they are addicting! Michelle makes them without nuts.
1 lb. creamed cottage cheese, small curd
1 cup chopped nuts
1-1/2 cups sugar
1 1b. soft real butter
2 tsp. cinnamon
4 cups flour
Mix together cottage cheese, butter and flour and divide before chilling and then chill 3 hours or overnight. Can mix with hands. Divide into 8 pieces. Roll each into circle 1/8 inch thick on floured board. Cut into 8-12 triangle pieces about 2-3 inches at widest part. Combine nuts, sugar and cinnamon. Sprinkle about 1 tsp. mixture on each wedge. Roll from wide end to narrow. Bake at 400 degrees on ungreased cookie sheet for 15 to 20 minutes. Frost when warm with powdered sugar frosting. Makes 64.
