Apricot Nut Bread

This delicious bread is from Mom.


21/2  cups flour
1/2  cup brown sugar
1  tsp. salt 1/4 cups milk
 4  tsp. grated orange peel
1  cup finely cut-up dried apricots
1/2  cup sugar
3-1/2  tsp. baking powder
3  Tbsp. oil
1  egg
1  cup chopped nuts


Heat oven to 350 degrees. Grease bottom only of loaf pan, 9x5x3 inches, or 2 loaf pans, 81/2x41/2x21/2 inches.  Mix all ingredients; beat 30 seconds. Pour into pans. Bake until toothpick comes out clean, 9-inch loaf 55 to 65 minutes, 8-inch loaf 55 to 60 minutes; cool slightly. Remove from pan and cool completely.
Variation: Decrease milk to 1/3 cup and omit orange peel and apricots. Mix in 11/4 cups mashed bananas. Bake 9-inch loaf 65 to 70 minutes.
