Spinach Quiche
This is Michelle's favorite kind of quiche.
2 10 oz. pkgs. frozen spinach
2 Tbsp. butter
1 Tbsp. finely minced scallions
1/2 tsp. salt
1 9-inch pie crust in quiche pan
3 eggs
1-1/2 cups half and half
1/4 cup grated swiss cheese 1
Tbsp. butter
A pinch of ground pepper
A pinch of nutmeg
Prepare spinach according to directions on package. Drain and set aside. Cook scallions in butter over medium heat for 2 or 3 minutes. Add spinach and stir for several minutes to allow moisture to evaporate. Stir in salt, pepper and nutmeg. Remove from heat. In a medium bowl beat eggs and half and half to blend. Gradually stir in the spinach mixture. Pour into the pie crust. Sprinkle with cheese, dot with 1 Tbsp. butter and bake at 375 degrees for 25 to 30 minutes, until puffed and brown.
