Spanish Rice

This "red rice" is one of Jeanine's favorites. From Mo's kitchen.

3  Tbsp. oil
1  cup rice
1  small onion, chopped
1  clove garlic
1/2  tsp. salt
2  cups broth
1  cup tomato puree


Heat oil and add rice and onion. Stir until almost golden. Mash garlic in salt and add to rice. Cook until golden. Add broth and tomato puree. Bring to boil. Cover, reduce heat and simmer 30-40 minutes, until liquid is absorbed.
