Shortcake Pastry
This makes good strawberry shortcakes.
1 cup flour
2 Tbsp. sugar
1/2 cup cold butter
1 egg yolk
In a small bowl mix flour and sugar. Add butter, cut in small pieces, stir to coat butter with flour. With fingers or pastry blender, cut or crumble until mixture is very crumbly. Add egg yolk and stir with a fork until blended with flour. Shape mixture into ball; cover and chill for 15 minutes. Roll out dough 3/16 to 1/4 inch thick. Cut into 2 1/2 inch rounds. Bake at 300 degrees for 25 minutes or until golden. Serve with strawberries and whipped cream.
