Quaker's New Oatmeal cookies
These cookies are soft, but not as chewy as the original Quaker's recipe.
1-1/4 cup margarine
1-1/2 cups flour
3/4 cup brown sugar
1 tsp. baking soda
1/2 cup sugar
1 tsp. salt (optional)
1 egg
1 tsp. cinnamon
1 tsp. vanilla
3 cups oatmeal
Beat margarine and sugars until fluffy. Beat in egg and vanilla. Combine dry ingredients and add to above mixture, mixing well. Stir in oatmeal. Drop by rounded tablespoonfuls on ungreased sheet. Bake at 375 degrees for 8 to 9 minutes for chewy cookies. May add chocolate chips, coconut or nuts.
