Princess Birthday Cake
This cake from Chop is also good when used for upside down cake.
3 cups sifted cake flour
1-1/2 cups sugar
3 tsp. baking powder
3 eggs, separated
1/4 tsp salt
1 cup pineapple juice
3/4 cup butter or shortening
Sift flour; measure and sift again with baking powder and salt. Cream butter until light. Add sugar gradually beating until fluffy. Beat egg yolks well. Add to sugar mixture, beating thoroughly. Add dry ingredients alternately with pineapple juice, beating after each addition, until smooth. Beat egg whites until stiff but not dry. Fold into batter. Bake in three greased 8-inch layer pans at 350 degrees for 30 minutes. For pineapple upside down cake use 1 cup brown sugar and 1/3-1/2 cup margarine in bottom of pan.
