Pineapple Cookies
Dad likes these moist cookies.
2/3 cup shortening
1 tsp. baking powder
1-1/2 cups brown sugar
1 tsp. vanilla
2 eggs, beaten
1/2 cup nuts
1 cup crushed pineapple, drained
1 tsp. baking soda dissolved in 1 Tbsp. pineapple juice
2-1/2 cups flour
1/2 tsp. salt
FROSTING:
6 Tbsp. butter, golden browned
1 tsp. vanilla
1-1/2 cups powdered sugar
3 Tbsp. hot pineapple juice
Cream together shortening and brown sugar. Add eggs, pineapple, and soda in juice. Stir in dry ingredients, vanilla and nuts. Drop from teaspoon onto cookie sheets. Bake at 375 degrees for 10 to 12 minutes. For frosting combine ingredients and beat until smooth. Spread on cooled cookies.
