Peanut Butter Balls
Here's another yummy recipe from Julie.
2 cups sifted confectioners sugar
2 Tbsp. butter or margarine, at room temperature
1 Tbsp. milk
2 tsp. sugar
1/2 tsp. vanilla
1/2 cup creamy peanut butter
1 cup semi-sweet chocolate chips
1 Tbsp. solid vegetable shortening
Combine sugars, butter, milk and vanilla with hands or mixer, until blended. Mix in peanut butter. Line a cookie sheet with waxed paper. Roll heaping tsps. of filling into 3/4 inch balls. Place on sheet. Chill at least 2 hrs. or until firm. Melt chocolate and shortening in a small saucepan. Scrape into a small bowl. One at a time, spear balls on a toothpick and dip in chocolate. Lift out and let excess drip off. Return to sheet. Chill 10 - 15 mninutes to firm up chocolate. Remove from -sheet; store in fridge in air tight container up to 2 wks.
