Orange Banana Bars
From Mom's kitchen.
1 extra-ripe banana
1 egg
1 cup flour
1 tsp. baking soda
1/4 tsp. salt
1/3 cup margarine
2/3 cup sugar
1/2 cup chopped walnuts, toasted
grated peel from 1 orange
ORANGE FROSTING:
1/3 cup margarine
1-1/2 cups powdered sugar
1 Tbsp. orange juice
2 tsp. grated orange peel
Cream together margarine, sugar and egg. Puree banana in blender. Combine dry ingredients. Beat in dry ingredients alternately with pureed banana. Fold in nuts and 2 tsp. orange peel. Turn batter into greased 8-inch square cake pan. Bake at 350 degrees for 30 minutes until toothpick comes out clean. Cool in pan. For frosting beat together margarine and sugar. Beat in orange juice and orange peel. Spread over bars.
