Old Fashioned Vanilla Sugar Cookies
Dad likes this recipe from Michelle, which makes big soft sugar cookies.
4 cups flour
2 cups sugar
1 tsp. baking soda
2 eggs, separated
1 tsp. salt
1 Tbsp. vanilla
1 cup shortening
1 cup buttermilk or sour milk
Sift flour, baking soda and salt; set aside. In a large bowl cream shortening with sugar, egg yolks and vanilla until light and fluffy. Stir in flour mixture alternately with buttermilk, beginning and ending with flour; blend well. In another bowl, beat egg whites until stiff but not dry. Fold into batter. Drop batter by approximately 2 Tbsp., 3" apart, on greased cookie sheets. Spread and shape each cookie into 2 1/2" circle, 1/2" high. Sprinkle generously with colored sugar. Bake at 375 degrees for 12 to 15 min. or until golden on edges. Makes 3 doz.
