Mo's Apple Cake

This favorite of Mo's is from her sister-in-law, Vicki.


1/2  cup oil
1  tsp. salt
1  egg (slightly beaten)
1  tsp. vanilla
4  cups sliced apples
2  cups chopped walnuts
2  cups flour
2  tsp. baking soda
1-1/2  tsp. cinnamon
2  cups sugar

Topping:
1  cup brown sugar
1 Tbsp. butter
1  tsp. vanilla
Milk


Combine oil, egg, apples and sugar. Sift flour, soda, salt and cinnamon, and add to apple mixture. Stir in walnuts and vanilla. Pour into oiled 8x10-inch pan. Bake at 350 degrees for 1 hour. Prepare topping: Add enough milk to brown sugar to moisten. Bring to a hard boil. Add butter and vanilla. Pour onto cake as soon as it comes out of the oven. Do not return to oven. Let cool. Excellent served with whipped cream.
