Mississippi Mud Cake
From Mom's kitchen.
1 cup oil
4 eggs
1-3/4 cups sugar
1-1/2 cups self rising flour
2/3 cup cocoa, divided
3 Tbsp. vanilla
11/2 cups chopped nuts
1-2 cups mini marshmallows
1-1/2 sticks butter or margarine
1 box powdered sugar
1/2 cup evaporated milk
Blend oil, eggs, sugar and vanilla. Mix flour and 1/3 cup cocoa in another bowl, and add to egg mixture. Mix well and add nuts. Bake in 9x13-inch greased pan at 325 degrees for 35-40 minutes. Remove from oven and top with one layer of mini marshmallows. Put in oven under broiler long enough to melt marshmallows. For icing melt butter and add powdered sugar, 1/3 cup cocoa and evaporated milk. Should have the consistency of yogurt. Pour over warm cake. Cool and serve.
