Lemon Cheesecake Bars

1  tsp. lemon zest, divided
1/4  lb. butter
1/4  tsp. salt
2  8oz. pkgs. cream cheese
3  Tbsp. lemon juice, divided
1-1/4  cups flour
1/4  plus 2/3 cup sugar
2  eggs


Line an 8" square pan with foil extending 2" beyond 2 sides. Beat butter, salt, 1/2 tsp. of the lemon zest and 1/4 cup sugar until creamy. Beat in 1 Tbsp. lemon juice until dough just holds together. Press dough into bottom of pan. Chill 15 min. Bake at 350 degrees for 20-25 min. Beat cream cheese with 2/3 cup sugar until smooth. Beat in eggs, 1/2 tsp. lemon zest and 2 Tbsp. lemon juice. Pour over crust. Bake until cheesecake is firm and top puffs, 35 to 40 minutes. Cool completely. Chill until cold. Let stand at room temp before cutting into tri
