Lazy Daisy Oatmeal Cake
Michelle found this quick cake on a package of oatmeal.
1 cup oats
1/2 tsp. ginger
1/2 cup butter
1/2 tsp. allspice
1-1/4 cup boiling water
1/2 tsp. salt
2 eggs, well beaten
1/4 tsp. cloves
1 cup sugar
1 tsp. vanilla
1-1/2 cups flour
1 tsp. baking soda
1 tsp. cinnamon
1 cup brown sugar
Frosting:
1/4 cup melted butter
3 Tbsp. milk
3/4 cup shredded coconut
1/3 cup chopped nuts
1/2 cup brown sugar
Combine oats, butter and boiling water. Set aside for 20 minutes. Beat eggs, sugars and vanilla. Sift dry ingredients and add, along with oats, to the sugar mixture. Beat well. Pour into a greased 13x9-inch pan. Bake at 350 degrees for 30-35 minutes, or until tooth-pick comes out clean. Cool for a few minutes. Combine frosting ingredients, spread on cake and place under broiler for one minute or until frosting begins to bubble.
