Layered Enchiladas

Malia and Michelle would make this often when they were teenagers.

1 lb. ground beef
1  onion, chopped
1  clove garlic, minced
1  tsp. salt
1/4  tsp. pepper
1  Tbsp. chili powder
4 oz. can chopped olives
8 oz. can tomato sauce
6  corn tortillas
1/2 lb. cheddar cheese, grated


Brown onion, garlic and ground beef; drain. Add seasonings, olives and tomato sauce; Simmer 10 minutes. Preheat oven to 350 degrees. In a round 2 qt. casserole alternate layers of tortillas, meat sauce, and cheese, ending with cheese. Cover and bake for 20-30 minutes. Serves 4-6.
