Irresistible Peanut Butter Cookies
These cookies from Julie are irresistible !!!
3/4 cup creamy peanut butter
1/2 cup shortening (or butter flavor shortening)
1-1/4 cups light brown sugar
3 Tbsp. milk
1 egg
1-3/4 cups flour
3/4 tsp. salt
3/4 tsp. baking soda
1 Tbsp. vanilla
Combine peanut butter, shortening, brown sugar, milk and vanilla and beat until well blended. Add egg; beat just till blended. Combine flour, salt and baking soda. Add to creamed mixture and mix just till blended. Drop by heaping teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake at 375 degrees for 6-8 minutes or until set and just begining to brown. Variations: Stir in 1 cup M&Ms. Or: Shape into 1 1/2-in. balls; roll in chopped peanuts; press center with tsp. before baking. Press mini peanut butter cup into center after baking.
