Happy Day Cake

Mom got this recipe for moist white cake from Chop, during her quest for the "perfect" white cake recipe.


2-1/4  cups sifted cake flour
1/2  cup shortening
3  tsp. baking powder
1  cup milk
1  tsp. salt
1  tsp. vanilla
1-1/2  cup sugar
2  eggs


Combine flour, baking powder, salt and sugar. Add shortening, 3/4 cup milk and vanilla. Beat 2 minutes. Add eggs and 1/4 cup milk. Beat 2 more minutes. Bake at 375 degrees, 25 minutes for layers and 35 minutes for square pans. This cake has such good flavor that it does not need frosting.
