Fruit Cake
Mom likes to make this fruit cake with fresh apples and dried fruits at Christmas time.
1 cup brown sugar
1 cup dates, cut in small pieces
1/2 cup oil
1-1/2 cups apples, raw, peeled and coarsely shredded
2 Tbsp. dry sherry
1 tsp. vanilla
2 cups flour
1 cup raisins
1/2 tsp. salt cup mixed candied fruit, coarsely chopped
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 cup nuts, chopped
2 tsp. soda
Mix brown sugar, oil, sherry and vanilla. Stir in raisins, candied fruit, nuts and dates. Mix apples with soda until combined; stir into fruit-nut mixture. In a separate bowl, stir together dry ingredients until well blended; then add to fruit
mixture, stirring to blend thoroughly. Turn into a greased and flour-dusted 9x5-inch loaf pan. Bake at 350 degrees for 1 hour and 25 minutes, until begins to pull away from sides of pan and a wooden pick comes out clean. Cool 3 minutes; remove to rack to cool. Wrap and refrigerate 1 day before slicing.
