Fresh Apple Cake

This apple cake is from Ma Costello.


1-1/2  cups oil
2  cups sugar
3  eggs, well beaten
3  cups apples, chopped
3  cups flour
1  tsp. salt
1  tsp. soda
2  tsp. vanilla

Frosting:
1  cup nuts
1  stick margarine
1  cup brown sugar
1/4  cup evaporated milk


Combine oil, sugar, eggs and apples. Mix in dry ingredients until well combined. Add vanilla. Pour into two 9-inch layer pans lined with wax paper. Bake at 325 degrees for 45 minutes. For frosting, melt sugar and butter. Add milk; let come to boil. Add nuts. Pour over warm cake. Can serve with whipped cream.
