Double Almond Cookies
Another recipe from Michelle with almonds!
3/4 cup margarine or butter, softened
2/3 cup sugar
1 egg
1 tsp. vanilla
1/4 tsp. salt
1-3/4 cup flour
TOPPING:
1 egg, beaten
1/2 cup almond paste
2 Tbsp. sugar
1 Tbsp. milk
sliced almonds
Beat margarine and sugar till light and fluffy. Beat in egg, vanilla and salt till blended. Gradually blend in flour; mix well. Chill 30 minutes or till firm enough to handle. Shape into a 12inch log. Wrap; chill 3 hours or overnight. Cut into 1/4-inch thick slices. Place on ungreased cookie sheets. Combine almond paste, egg, sugar and milk and beat till smooth for topping. Spread 1 tsp. topping on each cookie; sprinkle with almond slices. Bake at 375 degrees about 10 minutes. Cool on wire rack. Makes 48.
