Do-It-Yourself Condensed Soup

Substitute this low-fat recipe for one 10 3/4 oz. can condensed cream of chicken soup.


1  Tbsp. margarine
1/4  tsp. salt
3  Tbsp. flour
1/2  cup nonfat milk
3/4  cup chicken stock
dash garlic powder
dash pepper



Melt margarine over medium heat. Add flour and heat until bubbly; cook and stir 1 minute. Add chicken stock and milk. Stir with wire wisk until comes to boil. Add seasonings. Cook 1 minute more. Variations: -for mushroom soup add 1/4 cup fresh cooked or canned mushrooms. -for cheese soup add grated cheddar cheese and dry mustard.
