Date Pinwheels
These are another one of Mom's famous Christmas cookies.
1 cup chopped dates
1/2 cup sugar
1/2 cup water
1/2 cup nuts
1/2 cup shortening
1 cup brown sugar
1 tsp. vanilla
1 egg, beaten
2 cups flour
1/2 tsp. salt
1/4 tsp. soda
Slowly cook dates, sugar and water over low heat until thick, about 10 minutes. Stir frequently. Add nuts and cool; set aside. Cream shortening, brown sugar and vanilla until fluffy. Add egg beating until smooth. Sift flour, measure and sift again with salt and soda. Add to creamed mixture. Chill. Divide dough in half; roll each piece into a rectangle, 1/8" thick. Spread dough with date mixture. Roll up like a jelly roll starting with long side. Wrap; chill. Cut into 1/4" slices. Bake on greased sheet at 375 for 10-12 minutes. Cool 1 min. Remove.
