Dad's Roast Turkey

Another family holiday tradition. The low temperature assures better flavor, appearance and less loss of juices.


8-12 lbs.    2-1/2 to 3 hrs.
12-16 lbs.   3 to 3-3/4 hrs.
16-20 lbs.   3-3/4 to 4-1/2 hrs.


Put on rack 1/2 inch or more above bottom of pan. If using thermometer, place in the thickest part of thigh, without touching bone. Place in oven preheated to 325 degrees. Baste a few times. After 2/3rds cooked put foil loosely over top to prevent over cooking the breast. Turkey is done when thermometer registers about 185 degrees, or when the thickest part of the drumstick feels very soft when pressed between fingers. Remove from oven 1/2 hour before serving. Gobble Gobble!
