Crunch Cookies
These tasty, crunchy cookies are from Michelle's friend Marcia Strand.
1 cup brown sugar
1 tsp. soda
1 cup sugar
1 tsp. baking powder
1 cup shortening
2 cups quick oatmeal
2 eggs, beaten
1 cup rice krispies
1 tsp. vanilla
1/2 cup coconut
2 cups flour
1/2 cup nuts, chopped
1/2 tsp. salt
Cream together well the brown sugar, sugar and shortening. Add eggs, and Fix together. Sift dry ingredients and add to creamed mixture mixing well. Stir in oatmeal, rice krispies, coconut and nuts. Roll into balls and flatten with finger tips. May be sprinkled with sugar. Bake at 350 degrees for 8 to 10 minutes. If dough is too crumbly, add 1 Tbsp. cream.
