Creamy Rice Pudding
This creamy pudding is good topped with strawberry jam.
1/2 cup regular rice
2/3 cup sugar
1 tsp. vanilla extract
1/4 cup strawberry jam
1/2 tsp. salt
1 qt. milk
2 eggs
In a large heavy saucepan, combine rice, sugar, vanilla, salt and milk. Cover and bring to a simmer over medium heat. Simmer mixture until rice is very tender, about 40 minutes. Remove from heat. Beat eggs to mix. Slowly pour about 1/3 of the rice mixture into eggs, beating. Pour this mixture back into saucepan. Over low heat, stir constantly until mixture thickens enough to coat the spoon, about 1 minute. Remove from heat. Pour into individual bowls. Let the pudding cool about 5 minutes. Top with 1 1/2 tsp. of strawberry jam.
