Chocolate Rum Fruit Cake

This fruit cake from Michelle makes a nice gift at Christmas time.


2  cups flour
1-12  cups applesauce
1-1/4  cups sugar
1/2  cup milk
2  Tbsp. cocoa
2  Tbsp. plus
1/4  cup dark rum
2  tsp. soda
1  cup chopped pecans
1  tsp. cinnamon
1  cup raisins
1/2  tsp. nutmeg
1/2  cup chopped dates
1/2  tsp. allspice
1/8  tsp. salt


Sift together dry ingredients. Mix in applesauce, milk and 2 Tbsp. rum. Add pecans, raisins and dates. Pour into 3 mini loaf pans. Bake at 350 degrees for 1 hour. Cool in pan 10 minutes then remove to cooling rack. Slowly pour 1/4 cup rum over loaves while still hot. Cool; wrap in foil and refrigerate 24 hours.
