Chocolate Fudge

Mom likes to make this fudge at Christmas.


2  cups sugar
2/3  cup milk
2  Tbsp. corn syrup
1/4  tsp. salt
1/2  cup chopped nuts
2  oz. unsweetened chocolate or 1/3 cup cocoa
2  Tbsp. margarine or butter
1  tsp. vanilla


Cook sugar, milk, corn syrup, salt and chocolate in 2-qt. saucepan over medium heat, stirring constantly, until chocolate is melted and sugar is dissolved. Cook, stirring occasionally, to 234 degrees on candy thermometer or to soft ball stage; remove from heat. Add margarine. Cool mixture to 120 degrees without stirring. (Bottom of pan will be lukewarm.) Add vanilla; beat vigorously until thick and no longer glossy, 5-10 min. Quickly stir in nuts. Spread in buttered loaf pan; cool until firm. Cut into 1-inch squares.
