Chocolate Chip Applesauce Cake
The spices and chocolate chips make an interesting combination in this recipe from Berthe Mineart.
1/2 cup shortening or butter
1/2 tsp. allspice
1 cup sugar
1 tsp. cinnamon
2 eggs
3/4-1 cup sweetened applesauce
1-3/4 cup flour
1/2 cup raisins
1 tsp. soda
1/2 cup nuts
1/4 tsp. salt
1 cup chocolate chips
1/4 tsp. cloves
Cream shortening or butter (Do not use margarine). Add sugar gradually and cream until fluffy. Add eggs one at a time, beating well. Sift together dry ingredients. Add alternately with applesauce (1 cup applesauce if using shortening, 3/4 cup applesauce if using butter) in small amounts beating after each addition until smooth. Stir in raisins, nuts and half of the chocolate chips. Pour into 3x5x9-inch loaf pan lined with paper. Sprinkle remaining chocolate chips on batter. Bake at 325 degrees for 1 hour and 15 minutes. Best served next day.
