Chinese Chicken Salad

Leftover BBQ chicken is great in this quick recipe Michelle got from her friend Julie Hanley.

1   head napa cabbage, chopped
2   Tbsp. soy sauce
2   Tbsp. butter
12  cup oil
1/2  cup sunflower seeds
1/2  cup vinegar
1/2  cup slivered almonds
1/2-1/3  cup sugar
1  pkg. ramen noodles, crunched
2  chopped green onions
1  cup snow peas, blanched
1  cup diced chicken

Optional:
red cabbage, shredded carrot, shredded
meat, leftover


Melt butter. Toast sunflower seeds, almonds and ramen noodles, reserving seasoning packet; set aside. Combine cabbage, snow peas, chicken, carrot and any optional ingredients; set aside. Combine remaining ingredients with seasoning packet
mixing well to make dressing. Add dressing and toasted mixture to salad; toss and serve. This recipe is great for using leftovers. Experiment by adding or eliminating ingredients.
