Chicken Cacciatore
Mo uses a WHOLE bulb garlic! Yum!
3-4 boneless chicken breasts, cut up
1 cup sliced onions
16 oz. canned tomatoes
1 tsp. salt
1/2 tsp. celery seed
1 lb. shredded mozzarella cheese
3 Tbsp. cooking oil
3 cloves fresh garlic, minced
8 oz. tomato sauce
1 tsp. oregano
1/4 tsp. pepper
In a large skillet, brown chicken in hot oil. Remove chicken and set aside. Saute onions and garlic in remaining oil, until soft but not brown. Add tomatoes, tomato sauce, salt, oregano, celery seed and pepper. Bring to boil, then cover and simmer 30 minutes. Add chicken to sauce. In 1 1/2 quart casserole, layer chicken and sauce with shredded cheese. Cover and bake at 350 degrees for 30 minutes.
