Carrot Cookies

These moist cookies are one of Dad's favorites.


1  cup shortening, part butter
3/4  cup sugar
1  cup mashed, cooked carrot
2  eggs
2  cups flour
2  tsp. baking powder
1/2  tsp. salt
3/4  cup coconut

ICING:
1/2  cup butter
3  cup powdered sugar
1-1/2  Tbsp. orange rind
3  Tbsp. orange juice


Mix together thoroughly butter, sugar, carrots and eggs. Sift together dry ingredients and stir into creamed mixture. Add coconut. Drop by teaspoonfuls onto cookie sheets. Bake at 400 degrees for 8-10 minutes. Beat together icing ingredients and frost while still warm.
