Cake Roll
This recipe from Michelle can be used for ayule log.
4 eggs, separated
3/4 cup sugar
1/2 tsp. vanilla
3/4 cup cake flour, sifted
1 tsp. baking powder
1/4 tsp. salt
Use warm eggs. Grease and line with wax paper, a 15x10x1inch jelly roll pan. Sift salt, baking powder and flour; set aside. Beat egg yolks until thick and lemon colored; gradually beat in 1/4 cup sugar and vanilla. Beat egg whites until almost stiff; gradually beat in 1/2 cup sugar and beat until very stiff. Fold yolks into whites; fold in flour mixture. Spread batter evenly in prepared pan. Bake at 350 degrees for 12 min. or just until cake springs back when touched. While cake bakes, place clean dish towel on flat surface; sift thick layer of cocoa or powdered sugar over it. When cake is done, loosen sides and invert on towel. Lift off pan and peel off paper. Cut off crisp edges. Cool exactly 5 min. Roll up with towel from narrow end. Finish cooling on wire rack for 1 hour. Fill with custard icing or as desired.
