Butterquick Coffee Cake

This classic coffee cake with a crunchy topping is from Mom.


2  cups flour
1  cup sugar
3  tsp. baking powder
1  tsp. salt
1/3  cup soft butter
1  egg
1  cup milk

Topping:
2  Tbsp. soft butter
1/4  cup brown sugar
2  Tbsp. flour
1  tsp. cinnamon
1/2  cup coconut or chopped nuts


Sift together dry ingredients. Add butter, egg and milk. Beat hard for 2 minutes. Pour into greased 9-inch square pan. Combine ingredients for topping; crumble over batter. Bake at 350 degrees for 35 to 40 minutes. Serve warm.
