Black Bottom Cupcakes

These yummy cupcakes came from Michelle's school friend Cathy Hoeven.


8 oz. cream cheese
1/2   cup cocoa
1   tsp. baking soda
1/3  cup sugar
1/2  tsp. salt
 6 oz.  chocolate chips
1  cup water
1-1/2  cup flour
1/3  cup oil
1  cup sugar
1  tsp. vanilla
1  Tbsp. vinegar


Combine cream cheese, egg and sugar; beat well. Stir in chocolate chips; set aside. Combine flour, sugar, cocoa, soda and salt. Add water, oil, vanilla and vinegar. Beat well. Fill paper cups 1/3 full with batter and top with a heaping spoonful of cream cheese mixture; sprinkle with sugar and nuts. Bake at 350 degrees for 30 to 35 minutes. Makes 18 cupcakes.
