Best-Ever Lemon Pie

Mom got this recipe from "Dear Abbie".


1-1/4  cups sugar
6  Tbsp. cornstarch
2  cups water
6  Tbsp. fresh lemon juice or
1  tsp. lemon extract
1/3  cup lemon juice
3  eggs, separated
3  Tbsp. butter


Mix sugar and cornstarch together in top of double boiler. Add water. Combine egg yolks with 1/3 cup juice and beat. Add to rest of mixture. Cook till thick over boiling water for 25 minutes. This does away with the starchy taste. Now add lemon extract and butter and stir thoroughly. Pour into 9-inch pie shell and let cool. Cover with meringue made from 3 egg whites, and brown in oven.
