Banana Chiffon Pie
From Mom's kitchen.
1 pkg. gelatin
1/4 cup cold water
4 Tbsp. flour
1/2 cup plus
4 Tbsp. sugar, divided
2 cups milk
4 bananas, mashed
4 eggs, separated
1/4 tsp. plus a pinch salt, divided
2 tsp. vanilla
2 baked pie crusts
Soak gelatin in water. Mix flour and 1/2 cup sugar thoroughly. Add egg yolks, milk and 1/4 tsp. salt. Cook in top of double boiler. Beat a few times while cooking. When it thickens, add soaked gelatin and stir until well blended. Cool mixture. Beat egg whites with pinch salt, adding 4 Tbsp. sugar, 1 Tbsp. at a time. Fold bananas, vanilla and half of meringue into custard mixture. Pour into crust. Chill for 20 minutes to set top then garnish with banana slices. Cover with remaining meringue (or all can be folded into custard mixture) or whipped cream.
