Apricot-Walnut Cream Fudge

This delicious candy is from Sean's family.


1/2  cup dried apricots
1  cup chopped nuts
1  lb. powdered sugar
2/3  cup light cream (1/2 & 1/2)
1/4  cup light karo syrup
1/4  tsp. salt
1/2  cup marshmallo whip
3  Tbsp. butter
1  tsp. vanilla


Place apricots in strainer, over boiling water, cover. Let steam 10 min., cool; cut in small pieces. In heavy 3 qt. pan, combine sugar, cream, corn syrup and salt. Cook over medium heat, stirring until sugar dissolves. Continue to cook, stirring occasionally, to 235 degrees F on candy thermometer or until a little, in cold water, forms a soft ball. Remove from heat. Add marshmallow whip and butter, but do not stir. Let cool 15 min. Add vanilla. Beat until creamy. Quickly stir in nuts and apricots. Spoon into lightly buttered 8" pan. Cool. Best fresh.
