Amaretto Apricot Chews

The almonds and apricots make these wonderful !! Michelle likes to make these for the holidays.


1  cup flour
1  Tbsp. amaretto
1  tsp. baking soda
2-1/2  cups rolled oats
1  cup butter or margarine
1  cup snipped dried apricots
3/4  cup brown sugar
1/2  cup finely chopped almonds
1/2  cup sugar
2  cups powdered sugar
1  egg
2-3  Tbsp. amaretto


Stir together flour and baking soda; set aside. In a large bowl beat butter till softened. Add brown sugar and sugar; beat till fluffy. Add egg and 1 Tbsp. amaretto; beat well. Add flour mixture; beat till well mixed. Stir in the rolled oats, apricots and almonds. Drop dough by rounded tps. onto an ungreased cookie sheet.  Bake at 375 degrees for 8-10 minutes or till golden brown. Cool on cookie sheet for 1 minute; remove and cool thoroughly. Stir together powdered sugar and enough amaretto to make an icing to drizzle over cooled cookies. Makes 54.
