7-Minute Icing
Angel food cake with 7-minute frosting is one of Dad's favorite desserts.
2 egg whites
1/3 cup water
1-1/2 cups sugar
1 tsp. vanilla
1/4 tsp. cream of tartar or 1 Tbsp. light corn syrup
Combine egg whites, sugar, cream of tartar and water in top of a double boiler. Beat about 1 minute, or until thoroughly mixed. Then place over boiling water and beat constantly 7 minutes, or until frosting stands in stiff peaks. Remove from boiling water. Add vanilla and beat 1 minute, or until thick enough to spread. For Sea Foam frosting substitute brown sugar for white sugar.
